Joe Clair's Original Prince George's County Turkey Taco Soup

Joe Clair’s Turkey Taco Soup !!


This is what you need:

1 package of ground Turkey

Two packs low sodium taco seasoning

2 quarts low sodium Chicken broth

1 large onion (diced)

2 carrots (chopped or diced)

1 zucchini copped

1yellow squash chopped

2 jalapeño peppers (de-seeded and diced)

1 poblano or Anaheim pepper

Two cans petite diced tomatoes w/ chiles

1 bunch fresh cilantro

1 lime

1 bag original Frito’s

Olive oil


Directions:

In a large skillet brown the ground Turkey over medium heat with olive oil. Drain if you like. Add taco seasoning and prepare according to packet instructions.


As that finishes add olive oil to a large pot and cook onions and carrots over medium heat until the onions are starting to become translucent and carrots are getting tender.


Add meat mixture to onions and carrots. Add jalapeños, poblano, both cans of tomatoes. Additional seasoning packet and 1 1/2 quarts chicken broth. Stir until all ingredients are incorporated. Bring to a rolling boil. Let boil for 5-10minutes as jalapeños soften. Add zucchini and squash and stir. Taste. Now you may add additional broth or additional salt.


Let simmer 15-20mins


Serve hot. Garnish with chopped cilantro and squeeze lime.


Serve with Frito’s.
